This omelet is filled with endives, which promote strong bones and better vision, and turmeric, which helps with digestion and depression. Add a handful of delicious bacon and you’ve got yourself a hearty breakfast that will keep you satisfied all morning.

Ingredients

about 2 ounces (50g) of sliced streaky bacon (or 2 rashers, smoked or regular, depending on your taste)
3 medium eggs
11⁄4 ounces (35g) red endive, thinly sliced
2 tablespoons (5g) parsley, finely chopped
1 teaspoon turmeric
1 teaspoon extra virgin olive oil

Directions

Heat a nonstick frying pan. Cut the bacon into thin strips and cook over high heat until crispy. You do not need to add any oil, there is enough fat in the bacon to cook it. Remove from the pan and place on a paper towel to drain any excess fat.

Wipe the pan clean. Whisk the eggs and mix with the endive, parsley, and turmeric. Chop the cooked bacon into cubes and stir through the eggs. Heat the oil in the frying pan—the pan should be hot but not smoking.

Add the egg mixture and, using a spatula, move it around the pan to start to cook the egg. Keep the bits of cooked egg moving and swirl the raw egg around the pan until the omelet level is even. Reduce the heat and let the omelet firm up. Ease the spatula around the edges and fold the omelet in half or roll up and serve.
